
Do you ever get in a cooking rut? Well I do, and I am sick of it! My solution will be to try and cook using a new recipe every week or so, and I have decided to share them with you! I am so friendly sometimes. This first recipe isn't a new one, but I just made it for a family party and it was a hit! My nephew even called a couple of days later to get the recipe...so you know it is good.
Black Bean Salsa
2 cans Rotell brand tomatoes
1 can black beans, rinsed
1/2 red onion, finely chopped
1 can white corn, drained
1 avocado, chopped (I like to add 1 & 1/2 avocado's)
Freshly chopped cilantro to taste
2 limes, squeezed over entire mixture (I use the lime juice in a bottle)
Mix together, and serve with chips.
I found this recipe in the "Fox Pointe Neighborhood Cookbook 2006" (thanks mom!)
